Recipes | Broccoli Rice Casserole by Liz Henry


  • 4 cups cooked brown rice 
  • 1 bunch of fresh broccoli, coarsely chopped and barely cooked
  • 1/2-1 onion diced
  • 1 pkg sliced mushrooms
  • 1/2 stick of butter
  • 1-2 cans mushroom soup
  • 1 small jar Cheez Whiz regular or jalapeno (we use regular)

Saute onion and mushrooms in butter, (about 1/4 stick) until barely done. Mix rice, broccoli, and sauteed mixture together. Add Cheez whiz and 1 can mushroom soup and stir together. You might need another can of soup or more Cheez Whiz depending on how you like it (This recipe was given to me orally by a friend and that is what she said...haha! I don't usually add more of either one) Put in greased 8 x12 or 9 x 13 pan and bake at 350 until hot and bubbly (about 20 -30 minutes). You can make ahead and put in fridge and bake later.
