Recipes | Quick Asparagus and Tomato Salad

  • 1 Can of Asparagus Pieces
  • 1 Medium Tomato for Each Person
  • Mayo
  • Leaf Lettuce
Drain the can of asparagus. Lay a leaf of lettuce on each salad plate. Place tomato on lettuce leaf. Cut the tomato in quarters, but don't cut all the way through...just enough so the tomato opens nicely. Fill the center of the tomato with asparagus. Top off with a dollop of mayo.

Additional ideas: Try blanched asparagus rather than canned. Garnish with salt, pepper and/or diced chives. Try ranch dressing or cottage cheese, if mayonaise isn't your cup of tea.
