Recipes | Chicken & Spinach Dish

  • One package of chicken tenders - about 1 lb
  • One package of fresh spinach
  • 1/2 container of Philadelphia cooking cream
  • 4 mushrooms - medium size
  • 1/4 cup onion – chopped
  • 2 cloves garlic – minced
  • 1 Tbls paprika
  • 1/4 tsp cayenne pepper (optional)
  • 1 tsp poultry seasoning
  • 1 Tbls lemon pepper
  • olive oil (about 2/3 cup – divided)
  • Mixture of Parmesan cheese, Asiago cheese, & Italian bread crumbs

Brown the cut-up chicken in part of the olive oil until light tan in color. Remove and add rest of olive oil. Cook cut-up mushrooms and onion together. Add the chicken, garlic, seasonings, and cooking cream. Slowly add the fresh spinach. Cook until spinach is wilted. Layer cheese mixture and chicken in casserole finishing with cheese mixture. Cook at 350 for 45 minutes, uncovered. Serve over rice.
