Recipe | Artichoke Nibbles

  • 2 jars (6 oz each) marinated artichoke hearts
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 4 eggs 1/2 cup bread crumbs
  • 1/4 t salt 
  • 1/8 t pepper
  • 1/8t Tabasco sauce 
  • 1/8 t oregano
  • 2T minced parsley or dried
  • 1/2 pound sharp cheddar cheese (grated 2 cups)
Drain marinade from jars and reserve marinade. Chop artichokes and set aside. Put onions and garlic in fry pan and saute using marinade for oil. Saute 5 minutes.

Beat eggs in bowl. Add crumbs, salt, pepper, oregano, Tabasco sauce parsley, and onion mixture and then add cheese and artichokes. Mix well and turn into 7x11 in greased pan. Bake 30 minutes at 325 degrees and cut into 1 inch squares and serve hot. They freeze beautifully. Reheat 325 degrees, 10-12 minutes. They taste good if they happen to get to room temperature sitting on a table, but I doubt they will last that long--but should they, don't feel like you need to keep them piping hot.
