Recipe | Crabmeat au Gratin

  • 2 t butter
  • 2 c lump crab meat
  • 1 T cornstarch
  • 1 c cream
  • 1 egg yolk
  • salt/pepper to taste
  • 1/2 c grated cheese (half Parmesan and half cheddar)
  • Paprika sprinkled on top for color
Melt butter, add crab meat and saute 3 minutes. Add cornstarch mixed with cream and egg yolk. Cook until thick, season with salt to taste, pour into a buttered casserole, sprinkle with cheese and paprika. Bake at 350 degrees until cheese is melted. Serve with toast and salad. Serves 2 to 4.
