Recipe | Shrimp Florentine

  • 3 packages frozen chopped spinach
  • 2 T grated onion
  • juice of 1 large lemon
  • salt/pepper to taste
  • 2 cloves chopped garlic
  • 1 t cayenne pepper
  • 1 t worcestershire sauce
  • 6T butter
  • 3 drops Tabasco sauce
  • 1/4 cup flour
  • 1/4 t paprika
  • 2 cups cream
  • 1 T sherry
  • 2 pounds cooked shelled shrimp
  • 1 to 2 cups grated parmesan cheese 
Cook spinach and drain. Season with onion, lemon, salt, pepper, cayenne. Make cream sauce of butter melted, stir in flour and add cream slowly stirring constantly. Blend in garlic, Worcestershire sauce, Tabasco sauce, paprika and sherry.  In shallow casserole alternate layers of spinach, shrimp and cream sauce. Sprinkle with grated Parmesan cheese on top and heat 325 for 30 minutes. Serves 8 to 10.
