Recipe | Fresh Apple Cake

"I served this at a birthday party for 3 of my friends. They all raved and wanted the recipe...Here it is, enjoy!"

  • 2 C Sugar
  • 3 Eggs
  • 1 1/2 C Vegetable Oil
  • 1/4 C Orange Juice
  • 3 C Flour
  • 1 tsp. Baking Soda
  • 1/2 tsp. Salt
  • 1 tsp. Ground Cinnamon
  • 1 tsp. Vanilla Extract
  • 3 C Peeled & Chopped Apples
  • 1 C Chopped Pecans
Sauce:
  • 1 Stick of Butter
  • 1/2 C Buttermilk
  • 1 C Sugar
  • 1/2 tsp. Baking Soda

Preheat oven to 325 degrees. Generously grease a tube pan. In large bowl, combine sugar, eggs, oil, orange juice, flour, baking soda, salt, cinnamon and vanilla; mix well. Fold apples, coconut and pecans into batter, Pour batter into prepared cake pan and bake until a tester comes out clean, about 1 1/2 hours. Shortly before cake is done, melt butter in large saucepan, then stir in the sugar, buttermilk and baking soda and bring to a rolling boil; stirring constantly. Boil for 1 minute. Pour sauce over hot cake in pan as soon as you remove it from the oven.  Let stand 1 hour, and then turn out onto a rack to cool completely.
