Mixed Green Salad With Grilled Chicken

"I enjoy trying new recipes, experimenting to create my own and entertaining. The idea for this grilled chicken salad came from a friend who served it for lunch. Rather than using prepared dressing like poppyseed or a raspberry vinaigrette I experimented with a tarragon dressing with good results." - Sue Ready

Salad
  • 1 package mixed greens
  • 1 pint blueberries or blackberries
  • 1 pint raspberries
  • 1 package almond honey roasted almonds (in the deli section) 
  • 1 small cucumber sliced 
  • 2 large grilled chicken breasts or use a rotisserie chicken from the deli
  • Dressing
  • 1/4 cup buttermilk
  • 2 T fresh lemon juice
  • 1 t sugar
  • 1 t Dijon mustard
  • 3/4 t salt
  • 1/4 t pepper
  • 1/2 cup olive oil
  • 3 T chopped green onion
  • 1-1/2 T tarragon
  • 1/8 t celery seeds


Salad
place mixed greens on plate, add fruit and cucumbers, sprinkle with almonds, place grilled chicken on top.

Dressing
add all ingredients in blender and mix well, chill dressing for several hours to meld flavors. Note; dressing can also be used on asparagus or fish.
