Recipe | Chicken with Blackberry Mustard Sauce

"This recipe is great for summer grilling and makes good use of in-season blackberries."
  • chicken breasts (optional pork or beef) 
  • 1/2 cup chopped onion
  • 1 small box of button mushrooms cleaned and chopped
  • 2 TB. butter
  • 1/2 tsp. garlic from a jar
  • 2/3 cup Blackberry Preserves
  • 1 tsp. Dijon mustard
  • 2-3 TB. brandy
  • 1-1/2 cup blackberries
  • 1 TB. orange zest
  • 2 tsp. juice from an orange
  • 1/2 tsp. ginger
Directions: Saute mushrooms and onion in butter, Salt and pepper meat, add sauteed mushrooms and onions and grill, In a saucepan add blackberry preserves, mustard, brandy, zest, ginger and juice, Whisk all ingredients together, Cook over low heat about 5 minutes, Fold in blackberries, Serve sauce over cooked meat
