Recipe | Mustard Crusted Fish (Sent in by Kirsten Corda)

Makes 4 servings. Each serving contains 235 calories; 7 grams total carbohydrates; 8 grams total fat, 90 milligrams cholesterol; 29 grams protein. According to the Dietary Guidelines for Americans, 2010, a healthy diet includes at least three servings of fish per week.

Ingredients:

  • 5 T Reduced fat mayonnaise
  • 2 T Parmesan cheese, grated
  • 1 T Lemon juice
  • 2 t Dijon mustard
  • 1 t Horseradish 
  • 4 5-ounce Fillets of fish
  • 1/4 C Dry bread crumbs
  • 1 T Butter, melted
  • Cooking Spray 
Directions:

1. In a small bowl, combine mayonnaise, 1 T cheese, lemon juice, mustard, horseradish.
2. Place fillets on a baking sheet and coat with cooking spray.
3. Spread mayonnaise mixture on top of fillets.
4. In a small bowl, combine bread crumbs, melted butter and remaining cheese.
5. Lightly spread bread mixture on top of fillets.
6. Cook 425 degrees for 13-18 minutes or until fish flakes easily with a fork.
