Recipe | Sour Cream Baked Chicken (Sent in by Kirsten Corda)

Ingredients: 4 boneless skinless chicken breasts, 1 cup light sour cream, 1 sleeve saltine crackers, Salt free seasoning of choice

Preheat oven to 350°F and spray a 9x13 in baking dish with nonstick cooking spray. While the oven heats, place chicken breasts between two pieces of plastic wrap and pound until chicken is a uniform thickness for even cooking. Place crackers in a zip top bag and crush until no large pieces re- main; mix in salt-free seasoning. Lightly coat chicken breast in sour cream and then coat with cracker crumb mixture. Place chicken breasts in the baking dish and bake, uncovered, for 30 minutes or until chicken has reached an internal temperature of 165°F. Serve whole grain rice, a garden salad, or your family’s favorite vegetable.
