Recipe | Organic Tomato Slices with Cashew Garlic Lemon Cheese by Christy Tinsley Ilfrey

"....Here's a pic of today's lunch: organic tomato slices, *raw organic cashew garlic lemon cheese, wild organic capers, sprig of organic dill, and drizzle of organic hempseed oil. Divine, simply divine."

*Really it should be called hummus instead is cheese, ha. Using a food processor, add about 1c of raw organic cashews. No roasted stuff! Process them until coarse but not too chunky. Add juice of one lemon (I prefer Meyer lemons, but any lemon will do.). Process again for about 10-15 secs. Add 1-3 cloves garlic, to taste. (I prefer 3-4.). Process again for 10-15 secs. Add 2-3T. Bragg's liquid aminos. Run processor again and start adding a couple of T. of water at a time until you reach a smooth but thick consistency. Experiment by adding herbs, shallots or even nutritional yeast. Basic recipe is cashew + lemon juice + Bragg's + water.
