Recipe | "Ex-Boyfriend Brittle" by Ellen Reed

An ex-boyfriend of mine use to make this brittle during the holidays. We would always intend to make it and give it away as gifts, but it never made it past us!....we ate it all! We're still good friends, and I just managed to pry the recipe from him! Can't wait to taste this again. Yay! - Ellen.

  • 1 C sugar
  • 1/2 C white corn syrup
  • 1 C unsalted peanuts
  • 1 Tbsp. Butter or margarine
  • 1 tsp. Vanilla
  • 1 tsp. Baking Soda
  1. Combine in 2 quart bowl, sugar and corn syrup. Microwave on high 4 minutes
  2. Stir in Peanuts
  3. Cook 3 more minutes on high
  4. Mix in butter (or margarine) and vanilla
  5. Cook 2 more minutes on high. It should be turning a nice golden color.
  6. Stir in baking soda, stir fast it will start foaming. 
  7. Pour batch onto lightly greased pan.
  8. Let cool for at least 20 minutes and then crack with a butter knife (handle end.)
