Recipe | "Broccoli Cornbread" (Shared by Jody J.)

"My friend's mother made this over Christmas and it was a hit! I could not get enough. I know it sounds a little strange, but trust me, it is yummy eats!...and perhaps a good way to get healthy veggies inside an unexpecting child!"  

  • 2 boxes Jiffy cornbread mix
  • 4 eggs, lightly beaten
  • 1 stick butter
  • 1 pkg chopped broccoli, thawed and drained, BUT MUCH BETTER if you use fresh, chopped!--Blanched in boiling water for 3 mins
  • 1 medium onion, chopped fine
  • 1 small carton cottage cheese (This makes it super moist!)

Melt the stick of butter. In a greased (or non-stick sprayed) 9 x 13 in baking dish, combine all other ingredients and pour into the butter. Bake at 375 degrees for 35-40 minutes, or until lightly brown. Let cool some before enjoying.
