Recipe | "Roasted Veggies" by Jeanette Larson

"It's a tasty way to eat your veggies. The onions get a little caramelized and are popular. It's very warming on a cool day." - Jeanette Larson

Ingredients:
  • 2-3 red or Yukon potatoes, cut up
  • 2-3 carrots, peeled and sliced
  • 1 sweet potato, peeled and cut into chunks
  • 1 red bell pepper, sliced into strips
  • 2 stalks of celery, sliced
  • 1/2 head of cauliflower cut into pieces
  • 1 cup baby bella (crimini) mushrooms, sliced
  • 1 cup chopped onions
  • 2-3 T olive oil
  • *garlic to taste
  • Any other root vegetables you like can be included

Directions:
Toss the vegetables in a plastic bag to coat with olive oil. Place in a large glass pan. Bake at 350 degrees for about an hour or until the vegetables are tender. Stir to avoid sticking after about 30 minutes. Serve with rice or pasta or as a side dish.
